Hot Smoked Trout & Watercress Salad

 

We’re not quite ready to say goodbye to the summer yet, so we thought this zesty and fresh salad would help us cling on a little longer. It’s light and tangy, with a beautiful depth of flavour.

We were lucky enough to team up with ChalkStream Foods for this recipe, who supplied us with a beautiful side of their Hot Smoked Trout to enjoy with our crunchy watercress.

It’s quick, easy and is sure to impress!

Hot Smoked Trout & Watercress Salad recipe video:

Ingredients:

  • 1 side Hot Smoked Trout

  • 100g Watercress

  • 1 Red Onion

  • 1.5tbsp Sake Vinegar (or use White Wine Vinegar)

  • 200g Salad Potatoes

  • 100g Green Beans

  • 1 Braeburn Apple

  • 4tbsp Yuzu Mayonnaise

  • Salt & pepper to taste

Method:

  1. Finely slice the onion and add to a bowl with Sake Vinegar and a pinch of salt - toss to combine.

  2. Halve the potatoes and boil until softened (around 20mins). Add potatoes and Yuzu Mayonnaise to the onions and mix together.

  3. Cook the green beans in boiling water for a minute or 2. Meanwhile, core and chop the braeburn apple.

  4. On a plate, layer the watercress with the potato & onion mixture, green beans and apple. Flake the hot smoked trout over the top.

Serve with Yuzu Mayonnaise and Lemon Wedges for an extra citrus kick!
